Through out my weightloss journey, I’ve tried many diet including Paleo, Keto, 21 day vegan diet that lasted for only 3 days to name a few. Im always irritated when i hear weightloss gurus blab about how anti-diet they are. Honestly for me weightloss is weightloss at the end of the day. Whether your option is the knife or a high fat low-carb diet it does not affect my oxygen levels. We need to chill and be less judgemental. Until you find a diet or a eating lifestyle that works for you and your body i say keep searching babe.
This one is for the Paleo nation. I saw a sweet potato waffle recipe on instagram and my obsession with coconut called for a paleo friendly version. Coconut oil and flour are my pantry essentials and YES less expensive too 😂😂😂. My cheapskate shoulder always remind me everytime i turn my neck.
Paleo sweet potato waffles
1 medium sweet potato
2 medium eggs
1 teaspoon cinnamon
3 tablespoons coconut flour
1 teaspoon baking powder
1/3 teaspoon Himalayan pink salt
Grate the sweet potato using a box gratter and transfer the grated sweet potato in a bowl
Add in whisked eggs and the rest of the ingredients
Put the waffle mixture aside and preheat your waffle pan
Spray your preheated waffle pan olive oil spray. You may use coconut oil spray or brush with melted butter
Scoop your waffle batter into your waffle pan and cook as per waffle pan instructions
Transfer all cooked waffles into a serving dish and enjoy
I had mine with maple syrup, raisins and a scoop of my homemade two ingredients-no machice ice cream ( ice cream not paleo friendly, i know). Since its summer here (South Africa) i will be having more of this ice cream.
