Hey everyone! Today i went to the beach with my family. I must say trying to lose weight showed me a side about myself i didn’t know i had. I want to see results, therefor i care a lot about what i put in my mouth. I didn’t want to buy take aways i pack my lunch and snacks to the beach.
Its January and its time to cut all those bad Christmas Holiday habits out and toss them away. This salad recipe is great for a busy day, meal preparation and weightloss.
I made the roasted vegetables a day before for dinner and i used the leftover for this salad.
The recipe serves one person and it will keep you full for longer.
1 cup cooked quinoa
1 cup baby spinach roughly chopped
1 cup cherry tomatoes (halved)
1 cup roasted broccoli
1/2 cup roasted butternut squash
1 tablespoon olive oil
Himalayan pink salt and pepper
Combine all ingredients in a salad bowl
Drizzle olive oil and grind salt and pepper
Mix all ingredients and plate
May add in chicken, meat strips or tofu into the salad.
